House of Arras has made sparkling wine in Tasmania since 1995, under Chief Winemaker Ed Carr, from Chardonnay, Pinot Noir and Pinot Meunier by the traditional method.

Extended ageing on the lees — which the House calls tirage — is central to its style, and it is the clearest example a student will find of what cool-climate Australia can do.
